Our Extrem Puro Extremadura Iberico Loin Half-Roll is made from acorn-fed pigs reared in freedom on the Dehesa of Extremadura, following a hand-crafted process and natural curing. The secret to always obtaining the highest quality for our Iberico Loin is that it is only made from pure-bred Iberico pigs reared in our meadows, where they have over 2 acres of holm oak woods to feed in freedom, in the heart of the Extremaduran Dehesa, where they only feed on acorns and natural pasture. These pieces are spiced with the finest oregano and Pimentón de la Vera (Spanish peppers). Finally, they are left to air following a hand-crafted drying stage for 3 to 4 months in our natural drying cellars in Herreruela, with its thick stone walls that assist this high-quality curing process.All this gives as a result an unmistakable Iberico Loin characterized by its dark-red, veined color, intense, balanced aroma, an unctuous, juicy texture and a well-rounded, persistent flavor. The high quality of this product is reflected in its packaging.
