Make parallel cuts, sliding the knife delicately over the entire exposed surface. – Keep a few larger slices of beef or ham to cover the exposed surface after you’ve finished cutting. – Overlap the slices a little when placing on the plate for serving. – Observe, smell, taste and let yourself be carried away by the incredible pleasure of preparing Iberico cured ham.
