Caviar is taken from the Acipenser Naccarii or Adriatic sturgeon, an almost-extinguished species, which they have been able to rear in captivity. This kind of sturgeon is more than 250 million years old and it stands out for its slow growth. This fish is a real treasure and its taste and color are full of different notes. It is usually pearl gray, although it can also show different shades. Since the caviar Riofrío offers is completely fresh, it can be guaranteed that its tastes and notes will always be revealed despite the time, salt or preservatives added. The Granadan company has re-adapted the Russian process called Mallosol, to which only a tiny amount of salt is added, approximately 3% to 4%.
