All of the pigs have 2 acres of our holm oak woodland to graze in freely, in the heart of the Extremadura pastures, where we can be sure their only food is acorns and natural grazing. . In our drying store in the Extremaduran region of Sierra de San Pedro, in the mountains of Extremadura, all of the Iberian products are cured in the same way, the most natural possible, the ham for a minimum of 36 months, the shoulder ham for 24 months, and the other products between 3 and 4 months.
